The A.R.C. 'Cabernets' (featuring Cabernet Franc) is a soulful, West Gippsland red that captures the raw energy of the Baw Baw Shire’s volcanic soils. Crafted by James and Jess Audas, who farm their 4ha Warragul South vineyard according to organic and permaculture principles, this wine is a celebration of the "Cabernet family" in a cool-climate setting.
The Cabernet Franc component provides the wine's aromatic heartbeat: high-toned notes of raspberry, cassis, and a distinct herbal edge reminiscent of wild bramble and tobacco leaf. Unlike the heavy, structural Cabernets of warmer regions, the A.R.C. version is remarkably Pinot-esque—light-to-medium bodied, energetic, and incredibly "smashable." It is fermented with wild yeasts and bottled with minimal sulphites and zero fining or filtration, resulting in a transparent, savoury red that shines both at room temperature or with a slight chill.
