Armatore Anchovy Fillets in Olive Oil are a hallmark of Cetara’s world-renowned seafood tradition. Only the largest anchovies, caught during the spring on the Amalfi Coast, are selected to become these exquisite fillets. Following ancient artisanal methods, the anchovies are matured in chestnut barrels for a minimum of eight months before being hand-cleaned and preserved in premium olive oil. The result is a meaty, tender fillet with a perfectly balanced saltiness that elevates everything from simple crostini to complex pasta dishes.
